POSITIVE THOUGHTS: Strength

It has been said: LIFE GOES ON. Yes, it’s true, like it or not life does go on, but today -and every day- you have a chance to make a new decision about HOW it goes. You will not get it perfectly, and you will mess up some every day, just don’t stop trying and trying again.  Each day can bring you closer to your  goals, and dreams.

And sometimes that means leaving your past goals and dreams behind and looking for newer, better for you and others, goals and dreams. Other time it may mean to accept a situation that actually goes against our own nature and expectations and make the best out of it.

The ability to change and grow – in spite of set backs-  is true strength and beauty!

Peaceful Capri

The island of Capri,  in the Bay of Naples, has been appreciated for at least 2000 years.  Emperors Augustus and Tiberius both had homes here, Odysseus sailed past  Capri in Homer’s “Odyssey”  and has attracted ‘modern’ tourists for at least 3 centuries now.  The origins of Capri’s name are unknown but the everal have been suggested: Latin capra “she-goat,” Greek kapros “boar,” Etruscan capra “burial place” . This exceptionally beautiful island is best known for its dramatic coastal scenery. It is one of those  places that will forever stay in your memories, and make you wish you could come again.

Capri is the name of the island but it is actually divided into two sections. The eastern section takes the name of the island and the western part is called Anacapri.

LEMON Rice recipe by Angelica Di Chiara

My Riso al Limone (Lemon Rice)

Ingredients

  • 6 quarts water
  • 3 tbsp salt
  • 1 cup white short grain rice
  • 3 tbsp butter
  • 2 eggs
  • 1½ cup freshly grated parmesan cheese
  • 4 tsp lemon juice
  • 1tsp lemon rind
  • Pepper to taste

Instructions

  2. In a bowl, beat the eggs with a fork until they are well mixed and frothy. Set aside.
  3. In a large pot, bring the water to a boil over high heat. Add salt when a bubbling boil has been reached. Pour in the rice and stir.
  4. When water is back to boiling, reduce the heat to medium and boil uncovered for 12-14 minutes, or until rice is just about tender. Drain.
  5. In a pan, melt the butter over medium heat until it becomes bubbly, add the hot drained rice and stir. Lower heat, add cheese and stir well. Then, add beaten eggs and mix well. Add lemon juice and lemon rind. Continue to stir gently for 2 or 3 minutes. Rice will be very creamy.
  6. Serve immediately. Top with extra parmesan if desired, sprinkle with pepper and enjoy.

Notes

This is an easy and nutritious recipe. Much easier and lighter then Risotto, but equally good. Enjoy!!
